General Information About The Paella Party

Generally, the party is arranged in the patio. The chef needs a 6’ x 6’ cooking area and since propane is used, cooking must always be done outside. If dark, some lighting is required. No electrical outlets are needed for cooking. Since the paella is served buffet style, a table next to the chef may be used for plastic-ware or china, utensils, salad, rolls, etc. But other arrangements are also used, depending on the formality desired. Some guests enjoy the food preparation, so the cooking area should not be far removed.

The chef arrives 30 min. to 1 hr. before the guests and needs 15 minutes for set up. When most of the guests arrive and start having cocktails, the chef will start preparing the paella which takes about 45 minutes. It is important that the paella is served just after it is finished, so the host should inform the chef exactly the time he/she wants to serve. We understand all about tardy guests, but original serving time should as good as possible to avoid prolonged and unnecessary waits.
